りんご、なし、かりんのような香りに穏やかな苦味、梗由来のほんのりとしたスパイシーさが特徴。和柑橘のような酸が野菜や魚の旨味を引き立てます。
2023年からニュージーランドの醸造家 Theo Coles と Alex Craighead に師事。収量の約60％を全房でダイレクトプレス、約40％をスキンコンタクトし発酵が終わってからブレンドされています。
